FSSC 22000 Systems in Practice: From Surveillance Audit to Continuous Improvement

When quality becomes part of the culture, consistency.

QLC has recently initiated a new collaboration with Vergina Brewery, supporting the performance and ongoing development of their FSSC 22000 Food Safety Management System.

While FSSC 22000 surveillance audits are often perceived as routine verification processes, they provide a valuable opportunity to assess how effectively a food safety management system operates in practice — beyond documentation and formal compliance.

In the case of Vergina Brewery, the audit reflected an already established and well-structured approach to food safety and quality management. Our role as consultants is therefore not to “build from scratch”, but to work alongside their team to further strengthen system performance, enhance process reliability, and support continuous improvement in food safety systems.

Beyond Compliance: Turning FSSC 22000 Requirements into Practice

At QLC, we approach certification frameworks such as FSSC 22000 as more than a set of requirements. We see them as structured systems that, when effectively implemented, support:

  • consistent product quality
  • effective risk management
  • improved operational efficiency
  • long-term business resilience

The real challenge in FSSC 22000 certification is not achieving compliance, but ensuring that system requirements are fully embedded in daily operations.

Through close collaboration with the Vergina team, we focus on translating FSSC 22000 requirements into practical, day-to-day processes ensuring that food safety and quality are not only documented, but consistently delivered.

Surveillance Audits as Part of Continuous Improvement

A surveillance audit should not be viewed as an endpoint. Instead, it is a critical part of the continuous improvement cycle of a food safety management system.

These audits provide insight into:

  • system effectiveness
  • implementation consistency
  • opportunities for improvement

By leveraging these insights, organizations can strengthen their FSSC 22000 system performance and ensure long-term compliance and operational excellence.

Building Food Safety Systems That Perform

This collaboration is built on a shared understanding: that strong food safety management systems continuously evolve.

This enables us to develop a system that is continuously improved and:

  • consistently aligned with FSSC 22000 requirements
  • operationally effective
  • resilient to change while remaining up to date
  • capable of delivering measurable value

Because Strong Brands Are Built on Systems That Perform

In the modern food industry, trust depends on consistency.
And consistency is the outcome of well-designed and effectively implemented food safety systems.
